[Family] Extraordinary Dining @ Grand Hyatt Shenzhen’s Belle-Vue


Belle-Vue at Grand Hyatt Shenzhen presents a unique private dinner experience that takes fine dining beyond great food and great wine. Curating an immersive dining experience that inspires all the senses, the five-course “LivingGrand” private dinner features delightful surprises that will elevate the experience from special to extraordinary.


“To create a unique experience that would amaze guests, I put on my chef’s hat but thought about it from a diner’s perspective. With every dish, I added a ‘moment of more’ to stir the senses, unanticipated twists to pique diners’ curiosity, so that guests eat with awareness and luxuriate in each bite,” said Belle-Vue’s Chef de Cuisine Marc Briol.

With an underlying theme of sustainability, the dinner will begin with a slice of freshly baked sourdough bread served “off-the-plate”, au naturel, on a leaf. In an unexpected twist, Chef Briol will prompt diners to pick up a candle that has been burning on the table and to drip the melted “wax” onto the bread. A decadent alternative to butter, the candle is made from rendered beef fat, which imparts an aromatic lusciousness to the bread. Over the course of the dinner, intriguing moments such as this will make for a unique and memorable experience.


Another of the dinner’s specialties is the seafood course, which features sea bass, lobster and baby vegetables wrapped in clay and then baked. Guests’ enjoyment of this dish will begin before the first bite. A perfect example of the adage “you eat with your eyes first”, guests will be thrilled as they remove the lid of the clay vessel to unveil a plump, bright red lobster sitting grandly in stark contrast to the humble earthen bowl. Guests will complete the course tableside by drizzling rich lobster bisque over the dish, with the essence of lobster awakening taste buds for maximum enjoyment.


The dinner’s accompanying wines will be no less spectacular. Each course will be paired with select organic wines from vineyards that grow and harvest their grapes bio-dynamically, according to the phases of the moon.
